Quinoa Tabouli
This tabouli recipe is quick and easy and makes for a great lunch.
Ingredients:
- 1 cup cooked quinoa
- 1 cup chopped parsley
- 1/2 cup chopped cilantro
- 2 chopped scallions
- 8-10 chopped grape tomatoes (other tomatoes work as well)
- 1/2 chopped English cucumber
- 1 large minced clove of garlic
- Freshly squeezed juice from 1/2 lemon
- 3 tbsp extra virgin olive oil
- 1/2 tsp sea salt
- 1/2 tsp ground black pepper
Instructions:
Add your parsley, cilantro, scallions, tomatoes, cucumber, and garlic to a large bowl. Pour in your lemon juice and olive oil. Add in the salt and pepper. Use your hands to massage the liquids into the veggies/fruit/herbs. Add in the quinoa (make sure it has cooled down) into your mixture, stir with a spoon, and serve (you can add some extra lemon/olive oil/spices if need be)!
