Introduction
Burrito and burrito-like bowls are staples at our place. You can add whatever you'd like or have in the fridge – I find these are great for using up veggie scraps or leftover bits and pieces of food! Here's how I usually make mine:
Ingredients
- ½ cup cooked quinoa or rice
- ½ chopped tomato
- ½ chopped red onion
- 1 cup chopped spinach or kale
- 1 tbsp pumpkin or sunflower seeds
- ½ cup broccoli or cabbage
- 1 cup cooked chickpeas or black beans or chopped tempeh
Fajita Seasoning Mix
- ½ tsp cumin
- ½ tsp black pepper
- ½ tsp paprika
- ½ tsp onion powder
- ½ tsp garlic powder
- ½ tsp turmeric powder
Instructions

Prepare the seasoned legumes:
- Heat a bit of oil in a pan
- Add the fajita spices and cook until aromatic
- Add your choice of legumes (chickpeas/black beans/tempeh)
- Add a bit of water and cook until the seasoning is absorbed

If using broccoli or cabbage, cook them with the legumes for better digestibility.

Assemble your bowl:
- Start with the quinoa or rice base
- Add your fresh vegetables
- Top with the seasoned legumes
- Sprinkle with seeds
- Add Frank's red hot sauce and additional spices to taste
