Here”s a recipe that is great for breakfast, a midday snack, and/or dessert! This pudding is creamy and full of protein, good fats, and chocolatey goodness.
– 1 ripe avocado
– 1/3 cup cocoa powder
– 1/3 cup honey or pure maple syrup
– 2 tbsp coconut milk – ¼ tsp cinnamon
– a pinch of salt
– 1 tsp pure vanilla extract
– optional: a pinch of chia seeds and 1 tbsp (toasted) coconut shreds. The chia seeds will make the pudding taste more earthy, but they’re full of fibre and protein, so I think it’s a good trade-off!
Blend everything together, refrigerate for a minimum of 30 minutes and enjoy! You can add the toasted coconut to the blender or fold it into the pudding afterwards. This lasts me 3-4 days; 2 days if I share it with others.
