Kachoomar Salad
This is a super easy Pakistani-style salad that I love. It's usually served with a variety of daal/lentils and rice as its tartness complements the flavours and warmth of the daal really well. It also goes really well on burrito bowls!
Ingredients:
- ½ red onion (chopped finely)
- ½ cucumber (chopped finely)
- handful of grape tomatoes (cut into fours)
- juice from half a lemon
- 1 tsp white vinegar
- salt & pepper
Mix all the veggies together, dress them with the lemon juice and vinegar, and add a dash each of salt and pepper. Best served cold.
