Chocolate Avocado Pudding

Here's a recipe that is great for breakfast, a midday snack, and/or dessert! This pudding is creamy and full of protein, good fats, and chocolatey goodness.
Ingredients
- 1 ripe avocado
- 1/3 cup cocoa powder
- 1/3 cup honey or pure maple syrup
- 2 tbsp coconut milk
- 1/4 tsp cinnamon
- A pinch of salt
- 1 tsp pure vanilla extract
- Optional add-ins:
- A pinch of chia seeds (will make the pudding taste more earthy, but they're full of fiber and protein)
- 1 tbsp toasted coconut shreds
Instructions
Blend everything together, refrigerate for a minimum of 30 minutes and enjoy!
You can add the toasted coconut to the blender or fold it into the pudding afterwards.
This lasts me 3-4 days; 2 days if I share it with others.
