Roasted Baby Potatoes

Roasted baby potatoes – they are delicious and go well with so many dishes. These will make a great addition to your holiday dinner table!

Ingredients:
– ~1.5lb/680g bag of organic baby potatoes
– 1.5tbsp olive oil
– 4 cloves garlic (minced or pressed)
– 1/2 tsp freshly-ground pepper
– 1/2 tsp sea salt
– 1/2 tsp Italian seasoning
– 1/2 tsp onion powder
– 1 tbsp nutritional yeast flakes
– Garnish: fresh chives, fresh parsley, and/or cilantro
Instructions:
– Preheat oven to 400F
– Wash your baby potatoes and cut them if needed – if they’re grape-sized, then leave them whole and if they’re bigger, then cut them into halves or thirds
– Place all the potatoes in a baking tray/dish, add all the other ingredients and mix. I usually use a garlic press for the garlic, but minced works as well. I find that garlic powder doesn’t give the same depth in regards to the flavour
– Spread out the potatoes lay all your potatoes flat i.e. not on top of each other
– Place the tray in the oven and bake for 60 minutes, giving the potatoes a stir at the 35-40 minute mark.
– Once the potatoes are golden on the outside and cooked on the inside, take them out and garnish with chives, parsley, and/or cilantro before serving!o.
