Roasted Baby Potatoes

Roasted baby potatoes – they are delicious and go well with so many dishes. These will make a great addition to your holiday dinner table!

Ingredients:

  • ~1.5 lb/680 g bag of organic baby potatoes
  • 1.5 tbsp olive oil
  • 4 cloves garlic (minced or pressed)
  • 1/2 tsp freshly-ground pepper
  • 1/2 tsp sea salt
  • 1/2 tsp Italian seasoning
  • 1/2 tsp onion powder
  • 1 tbsp nutritional yeast flakes
  • Garnish: fresh chives, fresh parsley, and/or cilantro

Instructions:

  • Preheat oven to 400°F.
  • Wash your baby potatoes and cut them if needed – if they're grape-sized, then leave them whole and if they're bigger, then cut them into halves or thirds.
  • Place all the potatoes in a baking tray/dish, add all the other ingredients and mix. I usually use a garlic press for the garlic, but minced works as well. I find that garlic powder doesn't give the same depth in regards to the flavour.
  • Spread out the potatoes, laying all your potatoes flat (i.e., not on top of each other).
  • Place the tray in the oven and bake for 60 minutes, giving the potatoes a stir at the 35-40 minute mark.
  • Once the potatoes are golden on the outside and cooked on the inside, take them out and garnish with chives, parsley, and/or cilantro before serving!
