Who needs Reese’s Peanut Butter Cups when you can make your own peanut or almond butter cups that are awesome?
What you need:
– 1 jar almond butter or almond hazelnut butter (my favourite!) or peanut butter
– 1 cup coconut flour
– 1 pinch sea salt (or more if you’d like – I add 2 pinches)
– 1 tbsp coconut oil
– ½ cup cocoa powder
– ½ cup dark chocolate chips
– wax paper or wax paper/silicone candy or muffin liners
Take your jar of nut butter and empty contents into a bowl. Add the coconut flour and sea salt to the nut butter so that a crumbly dough is formed (add more coconut flour if it’s too wet). Make little two-bite-sized patties or balls with the dough and put in the freezer for an hour. Towards the end of that hour, double boil the coconut oil, cocoa powder, and chocolate chips to make a warm (not hot) smooth chocolatey liquid.
Liner method: If you want to make pretty ones, pour enough of your chocolate into your
candy/muffin liners to cover the bottom, place your frozen patty in the centre, and pour more chocolate on top to cover the patty completely. Freeze for an hour and enjoy!
Wax paper method: Once the hour’s up, dip the frozen nut butter patties/balls into the chocolate to cover completely, place on the wax paper (in a container or on a plate) and put in the freezer for an hour to solidify. Enjoy!
